Yes, you can customise the local text for Discobot in your Discourse instance. You can also see the English text file in this Discourse topic.
Discobot also uses a dynamic quote webservice so you could use your own quotation service to target your own interests. I imagine that would work really well for Feverbee.
There are queries for the Discourse Data Explorer plug-in to measure interaction with discobot. So if you're significantly changing the text it would be useful to see how this impacts on interaction.
